Marketing and Nutrition Comms Manager – Allergen Bureau
Natalie Hayllar is an Accredited Practising Dietitian (APD) with almost 30 years of experience spanning clinical nutrition, food industry innovation, and strategic health communication. Her passion for food allergen management began during her postgraduate training and research thesis at the Royal Prince Alfred Hospital (RPAH) Allergy Unit, where she supported research on children with severe peanut allergies, eczema, and asthma. This early clinical foundation continues to shape her commitment to consumer safety and evidence-based communication around food allergens.
Natalie has held senior roles in nutrition, marketing management, and innovation strategy across leading FMCG companies including Goodman Fielder Uncle Tobys, Nestlé and SunRice. Her work has spanned nutrition communications, product development, reformulation, and allergen labelling initiatives. She has also led content and communication strategy in the media sector with Pacific Magazines and Channel 7, bringing scientific credibility to consumer-facing storytelling.
As the founder of Santé Logic, a food and nutrition consultancy, Natalie partners with purpose-led organisations, health professionals, and brands to deliver credible and compelling strategies that put food, health, and the consumer at the centre. She holds a Master of Nutrition and Dietetics, with additional qualifications in psychology and marketing, and is currently completing her final subject in Lifestyle Medicine as part of a Postgraduate Certificate in Advanced Culinary Nutrition through ACU.
Natalie has proudly worked with the Allergen Bureau as a strategic consultant for over five years, supporting communication frameworks and stakeholder engagement to help unify science, policy, and public understanding in the allergen space across digital media. Living on a strict gluten free diet for health reasons, Natalie brings firsthand insight into the challenges faced by consumers managing food allergy and intolerance.
